Quick Pan Parmigiana

Happy Easter :) This quick chicken pan parmy is ready on the table in 15 minutes; not a single oven in sight. If you’re super efficient, you could crumb the chicken and freeze a batch for future. Enjoy xox


Serves 2.

What you’ll need:

  • 3 cloves garlic thinly sliced
  • 1 cup of breadcrumbs
  • 2 tablespoons freshly chopped parsley
  • 1/4 cup wholemeal flour
  • 1 egg – lightly beaten
  • 200g chicken tenderloin
  • 1/2 cup passata
  • 1/2 cup shredded cheese


  1. Put a non-stick pan on medium heat
  2. Meanwhile, combine the breadcrumbs, garlic and parsley in a shallow bowl
  3. Dip the chicken tenderloins in flour, then egg and then coat with the breadcrumb mix
  4. Oil the pan pop in the crumbed chicken – 3 min each side will do or until browned IMG_0249(1)
  5. Rest the chicken
  6. Heat up the passata in the pan, add in half of the shredded cheese – 2 minutes
  7. Pour onto the chicken
  8. Melt the remaining cheese in the pan and pour on top of your saucy schnitzels
  9. Serve with grilled veg or a nice salad
