We began with precision sliced salmon pieces dressed with a salty tang, cubes of beetroot and cucumber and lime vinaigrette.
The next ensemble of sushi were of upmost fresh ingredients and each grain of rice seasoned to perfection.
Japanese Barbeque Roll. Tender pieces of Karubi short rib with Gochujang sauce and white Kimchi.
Prawn Tempura Roll. Crisp tempura prawn with a delicate texture, asparagus and spicy aioli.
Queensland Roll. A single leg of Spanner crab wrapped in tofu skin and topped with a strip of avocado.
Spicy Tuna Roll. Tuna tatare with spicy truffle mayonnaise, rolled in rice and topped with a sprinkling of chili seaweed spice.
Salmon Belly Aburi. Charred smoky buttery salmon belly on a pillow of rice.
Chicken Robata. Mouth-sized portions of corn-fed chicken in yakitori sauce.
Prawn Robata. Seared prawns still with a fresh translucency, crisp and smoky with a tickling Ume Kosho and strips of chili.
King Brown Mushroom Robata. Robust portions of chargrilled mushroom drizzled in truffle soy.
DengakuMan. Tender morsels of white cod caramelised with sweet miso with sides of fresh cucumber and Japanese salsa.
Strawberry Mochi Ice-Cream. Tender folds of green tea mochi wrapped around tart and milky strawberry ice-cream.
Passionfruit Souffle. Yuzu and passionfruit dominate the luscious spoonfuls of perfectly risen souffle. Accompanied by creme fraiche, passionfruit curd, yuzu jelly, crumb and microbasil.
