As a test to the relentless waves of time, we returned to hear this composition – to relive the sweet harmonies that still linger after all these years.
Across the sparkling pier, the silence was broken by the cracking of shells. The introduction began – Grilled Lobster with Tomato, Basil and Lemon Oil. Moorish smoky lobster coated in a fresh lemon and basil emulsion, accompanied by sweet cherry tomatoes, radishes and garden leaves.
The bass notes of the introduction were harnessed by the mollusk – Seared Scallops with Pickled Kohlrabi, Cucumber and Green Shiso. The medallions reflected the searing heat yet gentle touch of the chef, matching this were the tart kohlrabi and cucumbers and refreshing shiso.
Gliding into the body of the piece, we tasted the theme. Deep chords to start was the Bass Groper. Goldenly crisp with a delicate belly, served with charred moist octopus, tomatoes, green olives and a touch of saffron.
Similar to the theme, the first variation added a bit more depth. Roasted Barramundi with soft salt licked tones of spanner crab, bursts of fresh corn, earthy puffed rice, all floating on a glacier of cold pressed lemongrass.
The third variation spoke with heartwarming and full-bodied tones. Falling apart at the slice of the knife was the Smoked Wagyu Short Rib with crisp Daikon and Spinach puree.
The final and special variation to the theme. Glistening roasted Chicken with Asparagus, Celeriac Mash and a pouring of Savoury Jus.
Then an expected sweet double finale. Blueberry Poached Pineapple, Coconut Sorbet and Toasted Meringue. A play on colours and textures, temperate and tropical. The sweet pineapple against the creamy coconut and crisp meringue gave a delightful mouthful.
A warm finish with the Pumpkin – sweet creamy pumpkin ice cream, with fluffy spice infused carrot cake and a luscious cinnamon panna cotta tying the melodies together.
An encore to the composer, Almond Tuielle, Vanilla Marshmallows and Dark Truffles to sign off.
A glorious bravo to the culinary composers, as it was an Aria to remember.
