A Reflection From The Sea – freshly marinated sweet Botan Shrimp, Sea Urchin and crowned with Oscietra Caviar, served with a Mother of Pearl spoon. Cool raw crunch of sweet prawns with creamy soft sea urchin and the popping saltiness from the caviar.

A Marriage Of Past and Present – Aburi Tasmanian Ocean Trout with Chilli and Citrus Soya. Tender with a smoky and crisp outer texture with a kick of chilli, topped with finely grated radish infused with citrus soya.
An end to the savory dishes with Mother and Father – Silk threads of somen with myoga and bursting and moist junsai in a light dashi broth; and warm gyokuro for a palate cleansing finish.
From Sun And Soil – Tasmanian Leatherwood Honey Ice Cream upon Lemon Granita and Gin Jelly with a wafer praline disc. The taste of honey runs clear against the crisp, harmonious lemon and warming gin jelly.
The Silver Rise – a dark chocolate ganache encases soft milk chocolate mouse, vanilla mousse with macadamias and a soft sponge base.
