While innocently browsing of Pinterest, this recipe popped up: Quinoa Meatballs (Special thanks to Honey, What’s Cooking ^^ ).
The rich, sweet passata; aromatic dried and fresh parsley,basil, thyme; chewy quinoa and breadcrumbs all synergise to create a quinoa ball with a surprisingly meaty texture and deliciously crisp exterior.
And I added zucchini pasta – simple use a vege peeler on a zucchini.
