It was an innocent walk along Chapel Street, until we spotted the infamous pink and white stripes of the Burch & Purchese Studio. After months of following their beautiful Instagram showcases, it was time to breathe and taste the sweet creations of B&P.
There were giant clouds of pastel meringues, glossy spheres of chocolate, rough cocoa soil, tubes of parfaits and mousses and perfectly layered gateaux.
First, was a Green Tea, Blackcurrant, Yuzu and White Chocolate Gateau. Layers of crunchy pistachio sponge, fluffy green tea sponge, then the rich white chocolate mousse, tangy yuzu curd and tart blackcurrant cream.
Next, was the Raspberry, Laurent Perrier Champagne, Peach and Lemon Parfait. One spoonful contained juicy raspberry jam, peaches and cream, dense raspberry and white chocolate cake, bubbly champagne jelly and soft white chocolate and champagne mousse.
Each dessert had such beautiful designs with unique, well balanced and complementing flavours that surprised and intrigued the palate. Amazing.
